Roasted Beets with Citrus and Goat Cheese

Ingredients (Serves 4)
3 medium beets, peeled and cut into bite-sized cubes
2 TBS olive oil or avocado oil
1/2 tsp sea salt
1/4 tsp black pepper
Zest of 1 orange
Juice of 1/2 orange
2 oz goat cheese, crumbled
2 TBS fresh parsley or dill, finely chopped
Optional: 1/4 cup toasted walnuts or pistachios
instructions:
Preheat oven to 400°F.
Toss chopped beets with oil, sea salt, and pepper.
Spread evenly on a baking sheet and roast for 35–40 minutes, stirring halfway through, until fork-tender and caramelized.
Remove from oven and transfer beets to a serving bowl.
While still warm, toss with orange zest and orange juice.
Top with goat cheese, fresh herbs, and nuts if using. Serve warm or at room temperature.
