Beet, Apple & Carrot Salad
This fresh, vibrant salad is a beautiful way to enjoy raw beets while supporting digestion and detoxification. Crisp apples, shredded carrots, and earthy beets come together with lemon and olive oil for a simple, refreshing dish that works well as a side, light lunch, or nourishing snack.
Ingredients (Serves 2-3)
1 cup raw beets, shredded, spiraled or thinly sliced
1 cup organic carrots, shredded
1 organic Honeycrisp apple, thinly sliced
Juice of 1 lemon
2 TBS extra virgin olive oil
Pinch of sea salt
3 TBS sunflower seeds
instructions:
Add shredded beets, carrots, and sliced apple to a large bowl.
Drizzle with lemon juice and olive oil.
Sprinkle with sea salt and toss gently to combine.
Top with sunflower seeds.
