Figs, Strawberry and Ricotta Salad

A simple summer salad that feels special enough for entertaining but comes together in just minutes. Sweet, juicy figs and strawberries pair beautifully with creamy ricotta, crunchy nuts, and a drizzle of honey for a refreshing dish that's perfect as a light lunch, side salad, or healthy dessert.

Ingredients (serves 2-4)

  • 4 cups sliced strawberries

  • 4-6 fresh figs, sliced

  • 1/2 cup ricotta cheese

  • 1/4 cup pecans, walnuts or hazelnuts, roughly chopped

  • 2 tablespoons honey

  • 1 tablespoon fresh lemon

  • Sea salt to taste

Instructions

  1. Place ricotta cheese on flat serving platter.

  2. Wash and slice fresh strawberries and figs.

  3. Chop nuts.

  4. Top ricotta with figs, strawberries, and chopped nuts.

  5. Drizzle honey over salad and squeeze lemon before serving.

Tips & Swaps:

  • Soak and then toast the nuts prior to chopping to bring out their natural flavor and add extra crunch.

  • Swap ricotta for cottage cheese, plain Greek yogurt, or whipped goat cheese for a different flavor and protein boost.

  • Add fresh basil or mint for a refreshing herbal note.

  • Replace the honey with a drizzle of balsamic glaze for a more savory version.

Why It Works for Summer:

  • Fresh figs and strawberries are rich in water, helping support hydration during the hottest months.

  • Protein from the ricotta and healthy fats from the nuts help keep you full without feeling heavy.

  • Summer fruits provide antioxidants, fiber, and vitamin C to support overall health while taking advantage of what's in season.
