Citrus and Greens Salad

This light, refreshing salad is a simple way to support digestion, hydration, and circulation. Oranges provide natural enzymes and vitamin C, while leafy greens and healthy fats help balance blood sugar and support gentle detoxification pathways.

Ingredients (Serves 2–3)

  • 2-3 cups arugula

  • 2 medium oranges, peeled and sliced or segmented

  • 1/4 cup thinly sliced red onion

  • 1/4 cup chopped fresh herbs (I love to use mint!)

  • 1/4 cup of your favorite nuts or seeds (walnuts, sliced almonds, pine nuts, pistachios, pepitas or sesame seeds all work great)

  • 2-3 oz goat cheese or feta (optional)

Dressing

  • 2 TBS extra virgin olive oil

  • 1 TBS fresh orange juice

  • 1 tsp Dijon mustard

  • 1 tsp raw honey

  • Pinch of sea salt

Instructions:

  1. Add greens to a large bowl.

  2. Layer in orange slices, red onion, fresh herbs, and nuts/seeds.

  3. In a small bowl, whisk together dressing ingredients until well combined.

  4. Drizzle dressing over salad and toss gently to combine.

  5. Top with cheese if using.

  6. Serve fresh.
