Bistro Chicken with Artichoke and Feta

This fresh, balanced dish is a simple way to support digestion, hydration, and sustained energy as the body moves further into warmer months. Artichokes provide targeted digestive support, while fresh herbs, healthy fats, and protein create a meal that feels both light and satisfying.

Ingredients (Serves 3-4)

  • 2 cups cooked gluten-free pasta (any style of pasta is great - penne, elbow, etc.)

  • 1 cup cherry tomatoes, quartered

  • 4 oz feta cheese, crumbled

  • 1/3 cup fresh basil, chopped

  • 1/4 cup red onion, finely chopped

  • 1/4 cup sun-dried tomatoes, chopped

  • 1 cup raw spinach

  • 1 cup artichoke hearts, chopped (jarred in olive oil works well)

  • 1 lb boneless, skinless chicken breast, grilled and diced

  • 1 cup Caesar dressing (Primal Kitchen dressing is a great option)

Instructions:

  1. Cook pasta according to package instructions and allow to cool slightly.

  2. Season chicken with salt and pepper and then grill until internal temperature of 165 degrees.

  3. In a large bowl, combine pasta, tomatoes, feta, basil, red onion, sun-dried tomatoes, and artichoke hearts.

  4. Add diced grilled chicken and toss gently to combine.

  5. Pour in dressing and mix until evenly coated.

  6. Serve slightly warm or chilled.
