Bistro Chicken with Artichoke and Feta

Ingredients (Serves 3-4)
2 cups cooked gluten-free pasta (any style of pasta is great - penne, elbow, etc.)
1 cup cherry tomatoes, quartered
4 oz feta cheese, crumbled
1/3 cup fresh basil, chopped
1/4 cup red onion, finely chopped
1/4 cup sun-dried tomatoes, chopped
1 cup raw spinach
1 cup artichoke hearts, chopped (jarred in olive oil works well)
1 lb boneless, skinless chicken breast, grilled and diced
1 cup Caesar dressing (Primal Kitchen dressing is a great option)
Instructions:
Cook pasta according to package instructions and allow to cool slightly.
Season chicken with salt and pepper and then grill until internal temperature of 165 degrees.
In a large bowl, combine pasta, tomatoes, feta, basil, red onion, sun-dried tomatoes, and artichoke hearts.
Add diced grilled chicken and toss gently to combine.
Pour in dressing and mix until evenly coated.
Serve slightly warm or chilled.
