Honeydew, Cucumber and Avocado Salad

Sweet honeydew pairs with crunchy cucumber, nutrient-rich kale, juicy tomatoes, creamy avocado, fresh herbs, and lime for a simple combination that works beautifully alongside grilled chicken or fish or as a refreshing side dish.

Ingredients (serves 4)

  • 3 cups honeydew melon, cubed

  • 1 large cucumber, chopped

  • 2 cups kale, stems removed and finely chopped

  • 1 cup cherry tomatoes, halved

  • 1 large avocado, cubed

  • 1/4 cup fresh mint, roughly chopped

  • 2 tablespoons extra-virgin olive oil

  • Juice of 1 lime

  • Sea salt, to taste

  • Freshly cracked black pepper, to taste

Instructions:

  1. Remove the stems from the kale, finely chop the leaves, and place them in a large serving bowl.

  2. Add the honeydew, cucumber, and halved cherry tomatoes.

  3. Cube the avocado and gently add it to the bowl.

  4. Roughly chop the fresh mint and sprinkle it over the salad.

  5. Drizzle with extra-virgin olive oil and fresh lime juice.

  6. Season with sea salt and freshly cracked black pepper.

  7. Gently toss everything together and serve immediately.
